Peanut Butter Cup Protein Truffles
Reece's Peanut Butter Cups are my ultimate vice, therefore I thought i'd see if I could create a way to take the protein content up & the calorie content down.
These delicious truffles come in at just over 100 calories per piece & are delicious... a must try for all peanut butter lovers!
Servings: Makes 10 truffles
Macros per truffle:
108kcal / 6g protein / 11g carbs / 4g fat / 1g fibre
Ingredients:
40g oats (regular or gluten free)
40g chocolate or vanilla whey protein powder (I use vanilla as it makes the truffle sweeter)
30g natural peanut butter (I used Whole Earth Smooth)
20g PPB or PB2 (powdered peanut butter) - optional
15g cocoa powder
3 tsp Choc Shot syrup (available in hot chocolate aisle of supermarket)
1 tbsp honey
3 Reeces peanut butter cups
Instructions:
1. Place all ingredients in food processor/blender & blend well.
2. Scoop out mix & roll into balls.
3. Place in fridge for 1 hour to firm up
4. Eat! :-)
Tip: The mix will be quite sticky when you first blend it - to make it easier to work with pop it in the freezer for 5-10 mins first.
