Cheesy Protein Pizza Balls
One of my favourite foods (besides Nutella) is pizza - you can't beat warm, gooey melted cheese. That's why I was especially happy with my latest creation as it means I can get my pizza fix for only 40 calories & 1g fat.
This recipe uses rice protein powder (available online, in Holland & Barratt or in larger Tesco stores) but you can use pea protein or unflavoured whey protein instead.
Servings: Makes 11 Balls
Macros per ball: 36kcal / 3.2g protein / 3.3g carbs / 1g fat / 0.5g fibre
Ingredients:
20g rice protein powder (can use unflavoured whey)
30g oats (regular or gluten free)
40g reduced fat grated cheddar cheese
90g concentrated tomato puree
10 sprays "Fry Light" Olive Oil or Butter spray
1/2 tsp baking powder
1tbsp mixed herbs or dried oregano
2 tbsp water
Salt & Pepper to taste
Instructions:
1. Preheat oven to 200c
2. Place all ingredients in food processor & mix well
3. Scoop out mix & roll into balls
4. Place balls onto a baking tray (lined with baking paper/baking sheet to avoid sticking)
5. Bake in centre of oven for 15 minutes
6. Allow to cool slightly
7. Eat! :-)
