Cherry Bakewell Pancake Stack
Last week I was asked to create two of the TEAM BOX boys a protein pancake stack so I came up with this one.
Some of you may have seen the recipe already on my Snapchat (girlgainzblog) but in case you haven't here it is! This one is great to indulge a sweet tooth & contains only 5g fat & a decent 48g serving of protein too.
Servings: Makes 1 stack
Macros per stack:
438kcal / 48g protein / 50g carbs / 4.7g fat / 2.5g fibre
Ingredients:
For Pancake
100g banana
120g egg whites
40g vanilla (or cherry) protein powder
15g glacier cherries
1 tsp almond extract
1/2 tsp baking powder
For topping:
1 tsp vanilla protein powder
Dash milk
15g glacier cherries
5g flaked almonds
Optional: Calorie free cherry syrup (I used one from Muscle Food)
Instructions:
1. Add all pancake ingredients into blender & mix into thick batter.
2. Preheat oil as desired in a good non stick pan (I used Fry Light 1 calorie coconut oil spray).
3. Pour in pancake mix (split into desired number of pancakes for stack). For perfect pancakes make sure the heat is not too high - this will stop the pancake sticking or burning on the outside before the middle is cooked through. You'll know when it's time to flip the pancake when you wobble the pan & the mix looks stable & "jelly like" i.e. no longer really runny on top.
4. Remove pancakes from pan & assemble into a stack.
5. Mix 1tsp vanilla protein powder with a tiny dash of milk to form a "glaze". Drizzle over the top of the pancakes with flaked almonds. Top with cherries & calorie free syrup.
6. Eat! :-)
