Cinnamon-Raisin Banana Bread

More cake that you can eat for breakfast.!
Never throw away overripe bananas again! A cinnamon-raisin protein & fibre packed banana bread that's super easy to make ahead & eat on the go. This picture really does not do this recipe justice, it's delicious! & the smell when you whip it out of the oven is just incredible.

Servings: Makes 10 pieces
Macros per piece:
113kcal / 7g protein / 12g carbs / 3.5g fat / 3.6g fibre
Ingredients:
80g coconut flour
80g egg whites
1 egg
75g raisins or sultanas
60g apple sauce
40g vanilla protein powder
30g natural peanut butter (I used Whole Earth Smooth)
1 banana (approx 100g - the riper the better!)
50ml semi skimmed milk
1tbsp water
1tbsp cinnamon
1/2 tsp baking powder

Instructions:
1. Preheat oven to 180C.
2. Line baking tin of choice with baking paper. I used a square tin but loaf tins work well with this recipe.
3. Place all ingredients except raisins into a blender/food processor & mix well.
4. Stir in raisins by hand.
5. Pour mix into tin & bake in centre of oven for 15 minutes.
6. Remove from oven & tin, slice, & place on wire rack to cool.
7. Eat! :-)
