Crunchy Nut Protein Balls
Inspired by the new Kellogg's Crunchy Nut Peanut Butter clusters (which by the way if you haven't tried yet are amazing!) I thought i'd make a more calorie friendly version.
A great one for cereal lovers & peanut butter lovers this one provides a delicious sweet-salty hit & a batch can be whipped up in minutes.
Servings: Makes 9 Balls
Macros per ball:
70kcal / 4.2g protein / 7.5g carbs / 2.5g fat / 1g fibre
Ingredients:
40g oats
30g Crunchy Nut Cornflakes
1 tbsp honey
30g smooth peanut butter
30g peanut butter flavour protein powder (can substitute for vanilla or caramel if preferred)
Instructions:
1. Blend the oats into a "flour".
2. Add 10g cornflakes & all other ingredients into the blender & mix until stuck together. Mix should stick together without being too gloopy (i.e. you should be able to easy scoop it out & roll it into balls).
3. Create 9 equal sized balls.
4. Crush the remaining cornflakes & roll each of the balls in them to coat. The easiest (& least messy!) way to do this is to crush the cornflakes into a large, shallow tupperware pot.
5. Eat! :-)
