Banana Fudge Protein Cookies

An old recipe that I created a little while ago but have only just realised I never wrote up! I actually first made these last summer during my contest prep when I was really craving some banoffee pie!
Servings: Makes 5 chunky cookies
Macros per cookie: 139kcal / 10g protein / 22g carbs / 2g fat / 1.5g fibre
Ingredients:
40g banana protein powder (if you don't have banana you can use vanilla)
1 large banana (the riper the better)
80g oats
1 tsp baking powder
15g mini fudge pieces (available in the baking section of most large supermarkets)
1 tbsp honey
Instructions:
1. Preheat oven to 180c.
2. Mix together all ingredients (except fudge pieces) in a food processor. You should end up with a cookie dough consistency.
3. Press the dough into cookie shapes on a baking tray lined with baking paper (or you can use a silicone baking mat if preferred).
4. Press a few fudge pieces into the top of each cookie & bake in the centre of the oven for 10-12 minutes (or until cookies are golden brown & fudge has melted slightly).
5. Place on a wire rack to cool or enjoy warm.
